Lime Trifle

  • 1/3 cup butter
  • 1 cup sugar
  • 2/3 cup lime juice
  • 5 egg yolks, beaten
  • 1 Tbsp. lime peel
  • 10oz. whipped cream
  • 15oz. angel food cake, torn into pieces

Preparation

Step 1

Melt butter in saucepan. Blend in sugar. Stir in lime juice and 1/4 cup water. Whisk in egg yolks. Cook and stir over medium-low heat about 18 minutes or until thickened. Remove from heat and cool slightly. Stir in lime peel. Cool completely.

Place whipped topping in medium bowl and gently fold in lime mixture. Layer one-third of the cake pieces in trifle bowl. Top with one-third of the lime mixture. Repeat layers twice. Chill at least 3 hours then top with lime zest.
