Fried Chicken with Lemon

  • 8 boneless chicken thighs, cut in half
  • 3 eggs, beaten
  • 4 cups panko
  • salt
  • 2 lemons, cut into wedges

Preparation

Step 1

1. Add enough oil to a large cast-iron skillet to reach a depth of 1-2 inches. Heat the oil over medium heat until it is hot but not smoking, ideally to a temperaute of 350F.

2. Dip one piece of chicken at a time into the eggs, then dredge in the panko. Working in batches to avoid crowding the skillet, fry the chicken in the hot oil until golden brown all over, about 5 minutes on the first side and 3 minutes or so on the other side. Using a slotted spoon, transfer the fried chicken to a wire rack set over paper towels to drain. Season with salt while still hot.

3. Serve with lemon wedges for squeezing over fried chicken before eating. It will heighten the flavor of the chicken.
