Ingredients
- 3 cups uncooked rotini pasta
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken
- breasts, cut into bite-size pieces
- 1 shallot, sliced
- 1/4 cup finely chopped red bell pepper
- 3 cloves garlic, minced
- 1 (28-ounce) can crushed tomatoes
- 1/4 cup heavy whipping cream
- 1 tablespoon sweet Italian herb
- blend seasoning"
- 2 cups packed fresh baby spinach
- Parmesan cheese (optional)
Preparation
Step 1
Cook pasta according to package
directions; drain well, set aside and
keep warm.
In a large Dutch oven, heat oil over
medium-high heat. Add chicken,
shallot, bell pepper, and garlic; saute
for 7 minutes or until chicken is
done. Add tomatoes, cream, and herb
blend; bring to a boil. Reduce heat,
and stir in pasta and spinach. Serve
immediately with Parmesan cheese,
if desired.
