Ingredients

  • 3

    cups uncooked rotini pasta

  • 1

    tablespoon olive oil

  • 1

    pound boneless skinless chicken

  • breasts, cut into bite-size pieces

  • 1

    shallot, sliced

  • 1/4

    cup finely chopped red bell pepper

  • 3

    cloves garlic, minced

  • 1

    (28-ounce) can crushed tomatoes

  • 1/4

    cup heavy whipping cream

  • 1

    tablespoon sweet Italian herb

    cups packed fresh baby spinach

  • Parmesan cheese (optional)

Directions

Cook pasta according to package directions; drain well, set aside and keep warm. In a large Dutch oven, heat oil over medium-high heat. Add chicken, shallot, bell pepper, and garlic; saute for 7 minutes or until chicken is done. Add tomatoes, cream, and herb blend; bring to a boil. Reduce heat, and stir in pasta and spinach. Serve immediately with Parmesan cheese, if desired.
