Ingredients
- 1/4 C crumbled feta cheese
- 1/3 C red fat sour cream
- 1 medium cucumber, peeled, seeded and coarsely shredded
- 1 1/2 t lemon juice
- 1/4 t pepper
- 4-6 1/2" whole weat pita bread rounds, cut in half and warmed
- 8 fresh spinach leaves, washed and stems removed
- 12 oz sliced deli lean roast beef
- 8 fresh tomato slices
Preparation
Step 1
Combine feta, sour cream, cucumber and lemon juice in medium bowl.
Line insides of pita pockets with spinach. Add roast beef and tomato. Serve with sour cream mixture.
