Ingredients
- Lime-Kissed Fruit Ingredients:
- 1/4 cup flour
- 1/2 cup egg substitute (or 2 large eggs, beaten)
- 2 cups crunchy cheese-flavored corn snacks
- Large zip-top bag
- 1 cup panko bread crumbs
- 2 tsp. dried parsley flakes
- 1/2 tsp. ground coriander
- 1/4 tsp. pepper
- 4 firm white fish (like tilapia or cod) fillets, (20-24 oz; thawed)
- 2 tbsp. canola oil
- 3 oz. frozen limeade concentrate (1/4 can)
- 1/4 cup honey
- 1/2 tsp. poppy seeds (optional)
- 1 3/4 produce fresh cut fruit (melons, pineapple, strawberries)
Preparation
Step 1
1. Place flour on plate (may be paper); place eggs in shallow bowl. Place cheese snacks in large zip-top bag; seal tightly and crush with fingertips until finely grounded. Add panko, parsley, coriander, and pepper; mix until well blended. Place mixture in second shallow bowl.
2. Dip each fillet in flour (coating both sides); shake off excess. Dip each fillet into egg (allowing excess to drip off). FInally, dip into crumb mixture (coating both sides); press with fingertips to coat evenly (wash hands).
3. Preheat large saute pan on medium 3-4 minutes. Place oil in pan, then add one half of the fish fillets; cook 3-4 minutes on each side or until golden and crisp. Place on paper towels to drain. Repeat with remaining fillets; add a little more oil, if needed. Serve.
Lime-Kissed Fruit Steps:
1. Place limeade in salad bowl to thaw. Whisk honey and poppy seeds into limeade.
2. Add fruit; toss to coat. chill until ready to serve.
