Lemon Squares

Ingredients

  • 1 cup butter, softened
  • ½ cup + 1 T. powdered sugar
  • 2 1/3 cup flour, unsifted
  • 4 eggs
  • 1 ¾ cup sugar
  • 1/3 cup lemon juice
  • ½ t. baking powder

Preparation

Step 1

Preheat oven to 350o. Cream butter and ½ powdered sugar. Add 2 cup flour and mix. Pat into 13”x9” pan. Bake 20 minutes. Combine eggs, sugar, and 1/3 cup flour, lemon juice and baking powder in blender and blend 5 seconds. Scrape sides – blend 5 more seconds. Pour over crust and bake 25 minutes or until golden brown. Cool and sprinkle with rest of powdered sugar. Cut into 32 pieces.
