Tangy Lemon bars

Ingredients

  • Crust:
  • 2 cups all purpose flour
  • 3/4 cup sweet cream butter, softened
  • 3/4 cup sugar
  • Filling:
  • 4 eggs
  • 2 cups sugar
  • 1/8 tsp. salt
  • 2 tsp. grated lemon peel
  • 1/4 cup lemon juice
  • 1/4 cup flour
  • 1 tsp. baking powder
  • Glaze:
  • 1 cup confectioner's sugar
  • 1 Tbs. sweet cream butter, softened
  • 1 1/2 to 2 Tbs. lemon juice
  • 1/2 tsp. vanilla

Preparation

Step 1

Combine crust ingredients in a mixer bowl. Mix at medium speed, 2 - 3 minutes, scraping sides of bowl . Pat into ungreased 13x9x2 pan. Bake near center of pre-heated 350º F oven for 18 to 22 minutes until very light brown at edges. In same bowl, combine eggs, sugar, lemon peel, salt and lemon juice. Blend at medium speed 1 - 2 minutes until well blended. Add flour and baking powder, blend well. Pour filling onto hot crust. return to oven and bake 23 to 25 minutes or until top is golden brown. Glaze when cool.
