Chicken with Artichokes and Garlic

Ingredients

  • 2 chicken breasts. Split with skin and bone
  • 2 cloves garlic, peeled and pressed
  • 1 can artichokes, in water – 14 oz or 1 pkg frozen
  • 1 med onion chopped finely
  • ½ cup chopped fresh parsley – or ½ tsp dried
  • 2 whole sprigs fresh rosemary – or ¼ tsp dried
  • 1 tsp cracked black pepper
  • 1 cup chicken broth

Preparation

Step 1

Preheat oven to 350.
Wash chicken. Place in 13x9 baking dish. Add other ingredients and pour broth over everything. Cover with foil and Bake 30 min. Baste every 10 to 15 minutes. Remove foil and continue basting and bake another 30-40 minutes until liquid has evaporated.
