Couscous Salad

Ingredients

  • 1 pkg couscous – prepare per pkg.
  • 1 cup flat leaf parsley
  • 1 cup fresh mint or ¼ cup dried mint
  • 4 med. Tomatoes peeled, cored, seeded and chopped.
  • 10 thin scallions cut into small rounds
  • ¼ cup lemon juice
  • ¼ cup extra virgin olive oil
  • salt

Preparation

Step 1

Prepare the couscous per package directions.

In a food processor, chop the parsley & mint. Transfer to small bowl. Add remaining ingredients except salt. Stir. Season with salt.

Place couscous in a bowl, fluff with a fork. Stir in dressing. Cover and refrigerate at least 1 hour but not more than 4 hours.
