Ingredients
- 1 cup chicken broth
- 3 TBS capers
- 1 1/2 tsp corn starch
- 4 tsp garlic
- 2 TBS lemon juice
- Salt & pepper to taste
- 1 1/2 lb seafood (or chicken)
Preparation
Step 1
1. In a 2 cup mixing bowl mix broth, capers, cornstarch, garlic, lemon juice, salt & pepper until corn starch dissolves.
2. Melt 2 tsp butter in a large skillet over medium-high heat. When butter starts to brown, add seafood or chicken and cook. Remove from skillet.
3. Add broth mixture to skillet, bring to a boil. Boil 1 minute until mixture has thickened slightly. Remove from heat, stir in remaining 1 tsp of butter. Return seafood or chicken to skillet and heat 5 minutes.
4. Serve over or with rice.
