Angel Hair with Creamy Turkey Sausage and Wild Mushroom Sauce

Ingredients

  • 12 Ounces Angel Hair Pasta
  • 1 Tbl Olive Oil
  • 1/2 Cup Chopped Shallots
  • 3 Cloves Garlic, Minced
  • 2 Cups Sliced Mushrooms
  • 1 Lb Sweet or Hot Turkey Sausage, cut
  • into pieces
  • 1 Tsp Dried Thyme
  • 1 Tsp Dried Oregano
  • 1/2 Tsp Salt
  • 1/2 Tsp Ground Pepper
  • 2 Cups Chicken Broth
  • 1/2 Cup Frozen Peas
  • 1 1/2 Cups Low Fat Sour Cream
  • 1/4 Cup Grated Parmesean
  • 2 Tbs Chopped Fresh Parsley

Preparation

Step 1

1. Cook Pasta and drain.
2. Heat Oil in large skillet over
medium high heat. Add the shallots
and garlic and cook, stirring for
a minute.
3. Add the mushrooms and cook,
stirring a few times until they are
tender and releasing juice, 3 - 5
minutes.
4. Add the sausage and brown on all
sides, about 5 minutes.
5. Add the thyme, oregano, salt and
pepper and stir until well
combined and the herbs are fragrant
6. Add the broth and bring to a
simmer.
7. Reduce heat to medium-low,
partially cover the pan and simmer
until the sausage is cooked through
about 10 minutes.
8. Add the peas and simmer 1 minute
more.
9. Stir in the sour cream and
parmesean and simmer to heat
through.
10. Remove from heat and stir in
parsley
