Bow Ties with Salami and Salsa Verde

Ingredients

  • 1 cup fresh flat parsley leaves
  • 2 Tbs. capers, rinsed
  • 6 anchovy fillets
  • 2 cloves garlic, chopped
  • 1/2 cup olive oil
  • 1 12/ tsp. red wine vinegar
  • 1/4 tsp. black pepper
  • 3/4 lb. bow ties
  • 1/4 lb. salami, cut into 1/4 in. cubes

Preparation

Step 1

In a food processor of blender, puree the parsley, capers, anchovies and garlic with the oil, vinegar and pepper. Cook the pasta in a pot of boiling, salted water until just done, about 15 minutes. Drain. Toss with the parsley mixture and salami.
