Ingredients
- • 2 minced shallots
- • 1 clove minced garlic
- • 2 tbsp of olive oil
- • 1/2 cup of Arborio rice
- • 1/2 cup of dry white wine
- • 2 cups of chicken broth
- • 1/2 cup of frozen peas
- • 1 crisp apple, granny smith or delicious
Preparation
Step 1
Saute 2 minced shallots and 1 clove minced garlic in a saucepan in 2 tbsp of olive oil til browned.
Add 1/2 cup of Arborio rice and saute until the rice is opaque.
Add 1/2 cup of dry white wine and incorporate over low heat.
1/2 cup at a time, incorporate 2 cups of chicken broth.
In the final go round, add 1/2 cup of frozen peas then peel core and finely chop an apple and add it to the risotto just before serving. Serve with a small portion of feta crumbled over top.
