Sweet Potato & Apple Casserole

Ingredients

  • 2# Sweet Potatoes (about 5-6 med.)
  • 1 1/2# Cooking Apples
  • 2/3 Cup Lt Brown Sugar
  • 6 Tbsp. Butter
  • 1/2 Cup Apple Cider or Juice
  • 3 Tbsp. Maple Syrup
  • 1 Tbsp. Lemon Juice
  • 1 Tsp. Cinnamon
  • 1/2 Tsp. Ginger

Preparation

Step 1

Bake Sweet Potatoes until tender. Cool. Peel and cut potatoes into crosswise slices 1/4 inch thick. Peel Apples; cut into slices 1/4 inch thick. Keep apple slices in water with a little lemon juice to prevent discoloring.
In saucepan, bring sugar, butter, cider, syrup, lemon juice, cinnamon & genger to boil. Lower heat and cook at slow boil 10 minutes.
Drain apples and pat dry. Arrange overlapping slices of apples with sweet potatoes in buttered shallow 2 Quart baking dish. Put slices in at an angle, a few apples , then a few sweet potatoes. Pour sauce over.
Bake 25-30 minutes at 325 degrees until aples are tender, basting occasionally with sauce in casserole.
Remove some juice if it is too liquidy but spoon sauce over each serving so don't remove too much.
