Ingredients
- 3 Tsp olive oil
- 1 small onion chopped
- 2 cloves garlic
- 1/2 tsp cummin
- 1/4 tsp pepper
- 1/2 tsp dried cilantro
- 5-6 medium boiling potatoes-peeled and cut into small chunks
- 1 7oz can diced green chiles
- 1 jalapeno pepper-chopped
- 3 Cans Chicken broth
- 1/2 Cup Sour cream
Preparation
Step 1
Heat the oil in a 2 quart pot and add the onion and garlic. Cook covered over low heat about 5 minutes. Uncover, stir in the cummin and pepper-stir for 2-3 minutes. Add remaining ingredients. Bring to a boil, cover and simmer slowly for 45 minutes.
Remove from heat and add sour cream. Garnish individual servings with shredded jack cheese.
