Potato Soup with Chiles

  • 3 Tsp olive oil
  • 1 small onion chopped
  • 2 cloves garlic
  • 1/2 tsp cummin
  • 1/4 tsp pepper
  • 1/2 tsp dried cilantro
  • 5-6 medium boiling potatoes-peeled and cut into small chunks
  • 1 7oz can diced green chiles
  • 1 jalapeno pepper-chopped
  • 3 Cans Chicken broth
  • 1/2 Cup Sour cream



Step 1

Heat the oil in a 2 quart pot and add the onion and garlic. Cook covered over low heat about 5 minutes. Uncover, stir in the cummin and pepper-stir for 2-3 minutes. Add remaining ingredients. Bring to a boil, cover and simmer slowly for 45 minutes.

Remove from heat and add sour cream. Garnish individual servings with shredded jack cheese.
