Cheese Potatoes

Ingredients

  • 1 32oz bag frozen Hash Brown Potatoes
  • 2 cans cream of chicken soup
  • 1 16oz sour cream
  • 2 cups shredded co-jack cheese
  • 1 cup shredded provel cheese
  • 6 slices bacon
  • 2 cups Ritz crackers crushed
  • 1 stick melted butter
  • 2 tsp garlic salt
  • (Optional) 1/3 cup chipotle with adobo sauce

Preparation

Step 1

Mix together in a 9 x 13 casserole dish the hash browns, chicken soup and sour cream.
Blend together the 2 cheeses.. reserve a ½ cup for topping. Mix cheese into potatoes. Season mixture with garlic salt.
Par cook 6 slices of bacon then chop into ½ in bites. Mix bacon into potatoes. Sprinkle ½ cup cheese on top. Sprinkle Ritz crackers on top then drizzle melted butter over crackers.

Bake at 400°F 45 min - 1 hr uncovered
