Flo's Lemon Bars

Ingredients

  • 2 Cups sifted flour
  • 1 cup confectionary sugar
  • Pinch of salt
  • 2 sticks softened butter
  • 4 eggs
  • 2 cups sugar
  • 6 tbsp flour
  • 7 tbsp fresh lemon juice

Preparation

Step 1

Preheat oven to 325 degrees

Mix 2 cups sifted flour, 1 cup confectionary sugar and a pinch of salt.

With pastry blender cut in 2 sicks of softened butter until you formed a dough.

Press into glass dish and bake 15-20 minutes until lightly browned. Let crust cool slightly.

Lower oven to 300 degree's

Wisk together: 4 eggs, 2 cups sugar, 6 tbsp flour, 7 tbsp fresh lemon juice.

Pour onto crust and bake 30minutes.

Refridgerate for 1 hour and then sift powderd sugar on top.

Cut into squares and serve
