Potato Pancakes

Ingredients

  • 3 c. potatoes
  • 2 eggs
  • 1 onion
  • 1/2 tsp. salt
  • 2 T. flour
  • 1/4 to 1/2 tsp. baking powder
  • Vegetable oil

Preparation

Step 1

On medium flame, heat enough oil in frying pan to coat the bottom and come up about 1/2-inch.
In food processor, add cut-up potatoes and cut-up onion Pulse until finely chopped. Add 2 eggs, salt, flour and baking powder. Pulse again until mixed.
When oil is hot. use slotted spoon to remove mixture and add to oil Use back of spoon to spread mixture more flatly. Add more spoons until the pan is full, usually 4 or 5. Cook on one side until brown; turn and cook other side, approximately 5 lo 6 minutes. Drain on paper towel. Serve with applesauce or sour cream.
