Zesty Chicken and Potatoes

Ingredients

  • 3/4 cup Italian Dressing
  • 3/4 teaspoon Lime Juice
  • 3/4 teaspoon Lemon Juice
  • 3/4 teaspoon Rosemary
  • 2 1/2 Potatoes chopped
  • Garlic powder
  • 4 Chicken thighs

Preparation

Step 1

Preheat oven to 400° F (200° C). Lightly grease a medium baking dish.

In a bowl, mix the Italian salad dressing, lime juice, lemon juice, and rosemary.

Place potatoes in the baking dish. Sprinkle garlic powder evenly throughout the dish. Place chicken on top of potatoes. Pour the dressing mixture over the chicken and potatoes. Seal dish with aluminum foil.

Bake one hour in the preheated oven, until potatoes are tender and chicken pieces run clear. If desired, remove foil for last 15 minutes, allowing chicken and potatoes to brown.

Note: Chicken will be more flavorful if marinated in dressing mixture before cooking. Chicken breasts may be substituted for thighs.
