Ingredients
- 2 tbsp bacon fat (or a combination of butter and olive oil)
- 6 med potatoes, sliced thinly
- 1/2 vidalia onion sliced thinly or chopped finely
- 1/4 small green pepper, chopped (optional)
- Salt and pepper to taste
- Additional butter as needed
- Additional seasoning, as desired (Salt, Cajun/Creole seasoning, garlic salt or powder)
Preparation
Step 1
Wash and peel potatoes, pat dry. Cut into very thin slices. Heat oil in a cast iron skillet or very heavy frying pan. Add the potatoes, onion, and bell pepper all at once, turn heat up to medium high and sprinkle with salt and pepper. Stir well to make sure seasonings are mixed in and vegetables are coated with the oil. Cook uncovered, without turning so the bottom layer will brown.
When bottom layer is nicely browned, stir and turn occasionally to cook all sides of the potatoes. Continue stir frying, uncovered, until the potatoes are tender and you reach the desired level of browning. Adjust the heat and add additional butter, as needed. Taste check and add salt and pepper to your personal taste. Add additional seasonings that you like, such as garlic salt or Cajun spices.
Serve immediately.
