Rhubarb-Limoncello Cocktail

  • 6 C. Sliced Fresh Rhubarb
  • 1 1/2 C. Sugar
  • 1 Vanilla Pod (split)
  • Limoncello

Preparation

Step 1

Mix sugar w/ Rhubarb, put in an ovenproof dish, add vanilla pod & bake for 1 hr. @ 350. Strain Rhubarb (reserve pulp for a future recipe) & keep the juice.
For 1 drink, mix together 1 oz. Limoncello & Rhubarb syrup. Top w/ crushed ice & serve.
