Ingredients
- 1/4 cup olive oil
- 3 tbsp. white balsamic vinegar
- 2 tsp. Dijon mustard
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. sugar
- 1 lb. cherry tomatoes (any color or combination)
- 8 oz. yellow squash sliced 1/4 inch slices
- 1/4 cup grated parmesan cheese
- 1/3 cup fresh mint
- 1/3 cup fresh basil
Preparation
Step 1
Bring pot of salted water to a boil.
In serving bowl whisk oil, vinegar, mustard, salt, pepper, and sugar.
Add tomatoes and squash,
Toss until coated.
Stir hot pasta and cheese into tomato mixture.
Serve immediately.
