Triple Tomato Fettucccine

Ingredients

  • 1/4 cup olive oil
  • 3 tbsp. white balsamic vinegar
  • 2 tsp. Dijon mustard
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. sugar
  • 1 lb. cherry tomatoes (any color or combination)
  • 8 oz. yellow squash sliced 1/4 inch slices
  • 1/4 cup grated parmesan cheese
  • 1/3 cup fresh mint
  • 1/3 cup fresh basil

Preparation

Step 1

Bring pot of salted water to a boil.
In serving bowl whisk oil, vinegar, mustard, salt, pepper, and sugar.
Add tomatoes and squash,
Toss until coated.

Stir hot pasta and cheese into tomato mixture.
Serve immediately.
