Ingredients

    cup olive oil

  • 3

    tbsp. white balsamic vinegar

  • 2

    tsp. Dijon mustard

  • ¾

    tsp. salt

  • ½

    tsp. pepper

  • ½

    tsp. sugar

  • 1

    lb. cherry tomatoes (any color or combination)

  • 8

    oz. yellow squash sliced ¼ inch slices

  • ¼

    cup grated parmesan cheese

  • cup fresh mint

  • cup fresh basil

Directions

Bring pot of salted water to a boil. In serving bowl whisk oil, vinegar, mustard, salt, pepper, and sugar. Add tomatoes and squash, Toss until coated. Stir hot pasta and cheese into tomato mixture. Serve immediately.
