Sweet Potato Casserole

Ingredients

  • Topping:
  • 3 cups mashed sweet potatoes
  • 1 c. sugar
  • 1/2 c. margarine
  • 1/4 c. margarine
  • 1/4 c. milk
  • 1 tsp. vanille
  • 1 8-oz. can crushed pineapple -- drained
  • 1 3 1/2 oz. can angel flaked coconut
  • 1 c. light brown sugar
  • 1/2 c. self-rising flour
  • 1/2 c. margarine
  • 1 c. chopped pecans

Preparation

Step 1

Mix potatoes, sugar, margarine, milk and vanilla together and beat well.

Stir pineapple and coconut into first mixture.

Topping: Mix all topping ingredients together and pour on top of sweet potatoes.

Bake at 350 degrees for 30 minutes.
