Ingredients

  • 3

    cups mashed sweet potatoes

  • 1

    c. sugar

  • ½

    c. margarine

  • ¼

    c. margarine

  • ¼

    c. milk

  • 1

    tsp. vanille

  • 1

    8-oz. can crushed pineapple -- drained

  • 1

    3½ oz. can angel flaked coconut

  • Topping:

  • 1

    c. light brown sugar

  • ½

    c. self-rising flour

  • ½

    c. margarine

  • 1

    c. chopped pecans

Directions

Mix potatoes, sugar, margarine, milk and vanilla together and beat well. Stir pineapple and coconut into first mixture. Topping: Mix all topping ingredients together and pour on top of sweet potatoes. Bake at 350 degrees for 30 minutes.
