Mango Chutney

Ingredients

  • 3 quarts mangoes, firm, peeled, and chopped
  • 2 pints white vinegar
  • 1 lb raisins, seedless
  • 2 T finely chopped garlic or small onion chopped
  • 4 oz fresh ginger, grated
  • 5 hot peppers - seeded & finely chopped
  • 2 T salt
  • 4 oz dry mustard
  • 3 lbs. brown sugar

Preparation

Step 1

Inlarge heavy bottom sauce pan put sugar, vinegar and salt - bring to boil and boil 5 min. Add all other ingredients, bring back to a boil and boil for 1 hour, stirring frequently.

Remove from heat, cool and fill sterilized jars and seal
