Roast Beef Sandwiches

Ingredients

  • DIJON SAUCE FOR ROAST BEEF:
  • Eye of round
  • Pepper
  • Rosemary or garlic French bread
  • 1/2 c. cream, whipped
  • 1/2 c. mayonnaise
  • 2 T. Dijon mustard
  • HORSERADISH SAUCE:
  • 1 tsp. hoseradish
  • 1/2 tsp. Dijon mustard
  • Salt
  • 1 c. sour cream

Preparation

Step 1

Rub roast with pepper and rosemary or garlic.
Preheat oven to 500. Put roast in oven and cook 5 minutes for every pound (example: 2 pound roast, 10 minutes). Turn oven off but do not open door for 2 hours. Slive roast beef very thinly with electric knife. Serve with sliced French bread and one of the following sauces.
