Ingredients
- 1 c. apple cider
- 2 acorn squash (2 1/2 lbs.), stems and seeds discarded, cut in 1" thick wedges
- Salt and Pepper
- 1/4 c. orange marmalade
- 2 tbls. dijon mustard
- 2 tbls. margarine or butter, melted
- 1/4 gr. cinnamon
Preparation
Step 1
1. Preheat oven to 400.
2. Pour cider into 13x9" baking dish; add squash, rounded sides down to dish. Season with salt and pepper. Cover with foil; bake 30 mins. or until tender.
3. Meanwhile, in medium bowl, mix margarine, marmalade, mustard, margarine, cinnamon and 1/4 tsp of salt until smooth.
4. Reset oven to 425. Uncover squash; brush on mustard mixture. Roast 30 minutes or until browned. Transfer to platter; pour pan juices over all,
