Acorn Squash - Orange-Dijon Roasted

Ingredients

  • 1 c. apple cider
  • 2 acorn squash (2 1/2 lbs.), stems and seeds discarded, cut in 1" thick wedges
  • Salt and Pepper
  • 1/4 c. orange marmalade
  • 2 tbls. dijon mustard
  • 2 tbls. margarine or butter, melted
  • 1/4 gr. cinnamon

Step 1

1. Preheat oven to 400.
2. Pour cider into 13x9" baking dish; add squash, rounded sides down to dish. Season with salt and pepper. Cover with foil; bake 30 mins. or until tender.
3. Meanwhile, in medium bowl, mix margarine, marmalade, mustard, margarine, cinnamon and 1/4 tsp of salt until smooth.
4. Reset oven to 425. Uncover squash; brush on mustard mixture. Roast 30 minutes or until browned. Transfer to platter; pour pan juices over all,
