Giant Choc Oat Raisin Cookies

Ingredients

  • 125 g butter
  • 1 tsp vanilla
  • 1 C brown sugar
  • 1/2 C sugar
  • 2 T honey
  • 2 eggs
  • 1 3/4 C flour
  • 1 tsp baking soda
  • 1 1/2 C rolled oats
  • 1/2 C chopped raisins
  • 1/2 C chopped pecans, toasted
  • 125 g white chocolate, chopped

Preparation

Step 1

Beat butter, vanilla, sugars, honey and eggs in medium bowl with electric mixer until combined.

Stir in remaining ingredients. Roll 1/4 cups of mixture into balls, using floured hands. Place about 10cm apart on greased oven trays (allow 4 per tray). Flatten until 1 cm thick.

Bake in moderate oven about 12 minutes or until lightly browned. Stand cookies 2 minutes before lifting onto wire racks to cool.
