Veggie Smoothie

No excuses for skipping breakfast! This healthy, filling veggie smoothie takes minutes to make and will keep you full until lunch.

Ingredients

  • 1/4 cup quinoa
  • 1/4 cup raw cashews
  • 1 large stalk rhubarb
  • 1/2 cup frozen raspberries
  • 6 ounces of water
  • 4 ice cubes
  • Stevia or xylitol to taste

Not to bombard you but I found a yummy way to add veggies to my smoothie..you know how happy it makes me when u eat veggies..I added rhubarb!

Dry blend 1/4 C quinoa and 1/4 C raw cashews. Add in 1 large stalk of rhubarb and blend. Added 1/2 cup frozen raspberries and 6 ounces water and 4 ice cubes (I like my smoothie cold even though I drink water room temp. (Stevia or birch xylitol to taste) enjoy!
