Roasted Potatoes

Ingredients

  • 3 lbs Yukon Gold or red-skinned potatoes, cut into wedges or large pieces
  • 1/4 C extra-virgin olive oil
  • 1/4 C balsamic vinegar
  • 1 t dried Italian seasoning
  • salt and pepper, to taste

Preparation

Step 1

Preheat oven to 400. In a large bowl, whisk together oil, vinegar and spices; add potatoes and toss to coat. With a slotted spoon, transfer potatoes to a large cookie sheet and bake, uncovered, about 1 hour, turning potatoes occasionally. When serving, pour reserved oil mixture over potatoes.
