Black bean, corn, avocado relish

Use this as a dip for tortilla chips, a side dish, or on a burger.

Ingredients

  • 1- 15oz. can black beans (rinsed and drained)
  • 2 ears of corn -cooked and shucked (frozen corn can be substituted)
  • 3 tomatoes (seeded and diced)
  • 1/2 green bell pepper -diced
  • 2 avocados- diced (hint: use avocados that are somewhat firm-if they are too soft, the relish will be mushy)
  • 1/4 cup red onion- diced
  • 2 Tbls, olive oil
  • 2 Tbls. red wine vinegar
  • 1 clove crushed garlic
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. cumin
  • juice of 2 limes
  • 3 Tbls. chopped cilantro * (optional)

Preparation

Step 1

Mix all ingredients together.

Can be made the day before.
