Ingredients
- 12 mushrooms
- 1 tablespoon yellow miso
- 1 cup pine nuts
- 1 cup fresh basil
- 2 cloves garlic
- 1 lemon, juiced (about 1/4 cup), or to taste
Preparation
Step 1
1. De-stem mushrooms (remove some of the caps’ centers if necessary), and set aside.
2. Place the rest of the ingredients in a food processor and process until smooth.
3. Fill the mushroom cups with pesto stuffing and bake for 30 minutes at 350 F until tops are browned.
