Corn and Black Bean Salad

Ingredients

  • 1 can whole kernel corn, drained
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, finely chopped
  • 1/2 c. diagonally cut green onions
  • 1/2 c. chopped red onion
  • 1 clove garlic, minced
  • 1 med. tomato, chopped
  • 1 jalapeno pepper seeded - chopped
  • cilantro sprigs or red onion wedge for garnish
  • 3/4 c. Italian dressing
  • 3/4 t. hot pepper sauce
  • 1/2 t. chili powder
  • 1 T. lime juice
  • 1 T. chopped fresh cilantro

Preparation

Step 1

Combine corn, black beans, bell pepper, green onions, red onion, garlic, tomato, and jalapeno in large bowl. Mix Italian dressing, hot pepper sauce, chili powder, lime juice, and chopped cilantro, shake. Pour dressing over, stir and refrigerate covered 6 hours or overnight.
