Brandied Strawberry Freezer Jam

  • 8 c hulled strawberries (2-1/2 lbs)
  • 1-2/3 c sugar
  • 5 T instant powdered pectin
  • 3 T brandy
  • 1/2 t lemon zest

Step 1

In a large bowl, crush 1 cup strawberries with potato masher. Continue adding berries and crushing until there are 4 cups of berries. In a small bowl, stir together sugar and pectin. Add to strawberries, stir in brandy and zest. Stir for 3 minutes.
Ladle jam into clean half pint freezer safe containers, leaving a 1/2" headspace. Seal and label. Let stand at room temperature for 30 minutes. Store in freezer up to 1 year or in refrigerator for 3 weeks.
