Red Velvet Cupcake Cookies

Whip up these quick and easy cookies for your sweethearts for Christmas or Valentine's Day! They're perfectly festive for each occasion!

Ingredients

  • 1 box Red Velvet Cake Mix
  • 2 eggs
  • 1/3 cup canola oil
  • 1/4 cup powdered sugar
  • 36 About 36 Candy Cane Hershey Kisses, frozen (or another variety)

Preparation

Step 1

Preheat your oven to 350°F.

Spray mini muffin tins with cooking spray and set aside.

In a medium size bowl combine the cake mix, eggs, and oil. Blend with your hand mixer for about 2 minutes or until mixed well.

Scoop out spoonfuls of dough into the muffin tins filling them about ⅔ of the way. Remember this is cookie dough and not cake batter so it is stiffer and won't pour.
Bake for 10 to 12 minutes and remove from oven when edges darken and firm up. The middles might be a little underdone but they'll firm up. Try not to overcook them or they'll get dry and crumbly.

Let the cookies sit in the pans for about 2 minutes until they are firmed up enough to remove. Then run a knife around the edge of each cookie and gently pry it out.
Line your cookie muffins up on a cooling rack and sift powdered sugar over the top. It helps to have some wax paper or paper towels underneath your rack so you don't make a mess of your countertop.

Gently press a Hershey Kiss into each cookie, pressing down far enough that you feel it kind of sink in but not so far that you break the cookie apart.
Makes 3 dozen cookies.

Notes:
You could easily adapt this recipe for any holiday. Choose a white cake mix and add a few drops of food coloring to turn it green for St. Patrick's Day or orange for Halloween!
You could ice the cookies instead of using powdered sugar. Then it would be easy to add all kinds of sprinkles and other decorations!

I freeze the Hershey Kisses in advance so they don't melt on top of the cookies. The chocolate Kisses don't melt as fast, but anything with white chocolate in it will melt faster so freezing will help.

If you don't have Candy Cane Kisses just use another variety. They make so many now!
