Spinach Avocado Salad

Ingredients

  • Warm Mustard Vinaigrette
  • 3 tbsp olive oil
  • 2 tsp dijon mustard
  • 2 tsp maple syrup
  • 1 1/2 tsp white wine vinegar
  • 1/4 tsp salt
  • 5 cups fresh spinach leaves, lightly packed
  • 2 ripe medium avocados, sliced
  • 1/2 cup sun-dried tomatoes in oil, drained and sliced
  • 1/3 cup toasted pecan pieces
  • 2 1/2 oz goat cheese, crumbled

Preparation

Step 1

Combine first 5 ingredients in small saucepan. Heat and stir on low until warm. Remove from heat.

Put remaining 5 ingredients into large bowl. Toss gently. Serve with dressing on side.
