Christmas Day Tomato Soup

Ingredients

  • 4 C diced tomatoes (fresh or canned)
  • 1 C chopped celery
  • 1/2 C chopped onion
  • 2 T sugar
  • 1/2 C butter
  • 1/2 C flour
  • 2 C chicken broth
  • 2 C half and half (or homog. Milk)

Preparation

Step 1

Cook tomatoes, celery, onion and sugar for 30 minutes. In separate saucepan prepare white sauce: melt butter, add flour, and stir with whisk until no lumps. Add chicken broth and half and half. Bring to boil---stirring constantly. Combine white sauce mixture and vegetable mixture together. Process in blender or with hand-held blender.
