Ingredients
- 8 peaches, peel, halve and pitted
- Juice of 1 lemon
- 1 tbs. vegetable oil
- 1 1/2 tbs. packed light brown sugar
- 2 tsp.water
- 2 tsp.pure vanilla extract
- 1/8 tsp. ground cinnamon
- 1/8 tsp. kosher salt
- 1 quart vanilla ice cream
Preparation
Step 1
1. Preheat Grill to high heat.
2. Combine the juice of one lemon and vegetable oil in a large bowl. Add peaches and toss to coat. Place peaches with liquid on a large piece of parchment lined foil.
3.Stir togetherlight brown sugar,water,vanilla extract, cinnamon and salt. Brush over peaches. Fold foil to form a packet, crimping edges to seal. Grill covered, for 15 minutes
4. Slice peaches and divide among eight bowls. Top with scoops of vanilla ice cream and Serve immediately.
