Nana’s Carrot Cake

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 and 1/2 cups vegetable oil
  • 2 cups sifted flour
  • 3 teaspoons cinnamon
  • 1 tsp salt
  • 2 tsp baking soda
  • 1 tsp vanilla
  • 3 cups grated carrots (approx. 1 small bag of short-cut carrots)

Preparation

Step 1

In a large mixing bowl beat eggs, sugar, vanilla & oil until light & frothy. Stir together dry ingredients and add a little at a time until well blended. Beat well. Add grated carrots. Pour into well greased cake pan. Bake at 350 for 45 minutes for two layer pans, 65 minutes for tube pan. Cool completely before icing.
