Frosted Caramel Apple Pie

Ingredients

  • A. Pie Crust:
  • 1/2 C shortening, room temp
  • 1/2 C lard, very soft
  • 1 teas salt
  • 1/2 C boiling water
  • 3 C all-purpose flour
  • B. Pie Filling:
  • 3 to 3 1/2 # Granny Smith apples
  • 1 C light brown sugar, packed
  • 4 TBL cornstarch
  • 2 TBL flour
  • 1/2 TBL small tapioca
  • C. Frosting:
  • 3 TBL butter
  • 1 1/2 C powdered sugar
  • 1/2 teas vanilla
  • 2-3 TBL evaporated milk
  • 1/2 C English toffee bits

Preparation

Step 1

A. Place shortening, lard & salt in a large bowl & beat till smooth. Pour boiling water over all & stir again. Let cool to room temp, then gradually add the flour. Chill. Divide into two pieces, roll out half in a 9" pie pan. Chill remaining dough.. OR you can use prepared pie crust (which is what I do most of the time).
B. Peel, core & slice the apples. Combine sugar, cornstarch, flour & tapioca. Toss w/ the apples. Pour into prepared pie crust. Roll out & top with second half of crust, cover & flute.
Bake @ 425 for 15 minutes, then @ 350 for 45 minutes. Let cool.
C. Heat butter in saucepan over medium heat. Cook till golden brown. Remove from heat. Add powdered sugar, vanilla & enough milk for pouring consistency. Drizzle over baked pie & add toffee bits.
