Ingredients
- DRY INGREDIENTS:
- 3/4 cup organic coconut flour
- 2 scoops Gaspari Myofusion Protein Powder in Banana Perfection (could sub with Vanilla)
- 1/2 cup Stevia (could sub with Ideal)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- WET INGREDIENTS:
- 1 cup mashed very ripe banana
- 1/2 cup Liquid Egg Whites
- 6 ounces Plain Greek Yogurt
- 1 teaspoon vanilla extract
Preparation
Step 1
Pre-Heat oven to 350°F. Spray muffin tin with non-stick spray and set aside.
Mix dry ingredients in one bowl and set aside. Mash 1 cup very ripe banana and mix that with the rest of the wet ingredients until all lumps are gone.
Combine dry and wet ingredients and mix completely. Separate batter equally into the muffin tray. Bake for 16 to 20 minutes.
Toothpick should come out clean when they are done. Set on a cooling rack to cool. Enjoy!
