Apple Bread with Salted Caramel Icing

Ingredients

  • For the topping:
  • 3 cups apples Peeled, Cored, and cubed
  • 1 cup sugar
  • 2 eggs
  • 1 tbs vanilla
  • 1 tbs apple pie spice
  • 2 cups flour
  • 1 stick butter
  • 1 tbs baking powder
  • 1 stick salted butter
  • 2 cups brown sugar
  • 1 cup heavy cream
  • 2 cups powdered sugar

Preparation

Step 1

In your mixer cream together eggs, butter, apple pie spice, and sugar until creamy and smooth. Stir in your apples. In another bowl mix flour and baking powder. Add your flour mix to your wet mix. I added half of my mix at a time. The batter was thick. Pour into your 7″ springform pan. Place your trivet in the bottom of your Instant pot and one cup of water. Place your pan on the trivet. Put on manual high pressure for 70 minutes. Do a quick release. Remove and top with Icing.



Icing Directions:

Melt butter in a small saucepan add brown sugar and let come to a boil continue cooking for 3 minutes or until sugar is melted. Stir in heavy cream. continue cooking for 2-3 minutes. until slightly thickens. Remove from heat and let completely cool. Mix in powdered sugar with a whisk until creamy with no lumps.
