Ingredients
- 1 pound three cheese tortellini
- 1 pint grape tomatoes, sliced
- 1 bell pepper, chopped
- 1 cucumber, chopped
- 3/4 cup sliced olives
- 1/4 cup sliced or chopped red onion
- 1 cup chopped salami or pepperoni (about 1/4 lb)
- 1 1/4 cups Italian dressing, more if needed
- Parmesan cheese
Preparation
Step 1
1. Cook tortellini according to package directions.
2. Drain and run through cool water, until cooled.
3. Combine tortellini, tomatoes, bell pepper, cucumber, olives, red onion and salami in large bowl.
4. Pour dressing over top and stir gently until evenly coated.
5. Store in refrigerator until ready to serve - at least one hour.
6. Top with Parmesan cheese.
