Creamy Corn and Broccoli Chowder

Ingredients

  • 1 tablespoon butter
  • 1 medium onion, chopped (1/2 cup)
  • 3 cups water
  • 1-1/4 cups Potato Buds (dry)
  • 2 cups frozen broccoli
  • 1-1/2 cups frozen whole kernel corn
  • 1/4 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 1 cup half-and-half

Preparation

Step 1

Melt butter in 3-quart saucepan over medium-high heat. Add onion; cook and stir 3 minutes. Stir in water; heat to boiling. Stir in dry potatoes; cook 1 minute, stirring constantly. Stir in broccoli, corn, salt, garlic powder and pepper. Heat to boiling; reduce heat to low. Simmer about 10 minutes, stirring occasionally, until vegetables are tender. Stir in half-and-half. Cook 3 to 4 minutes or just until hot.
