Ingredients
- 3/4 cup water or vegetable stock
- 3/4 cup orange juice
- 1 1/2 cups instant couscous
- 12 fresh dates,pitted and chopped
- 2 tbsp parsley,stemmed and chopped
- 1 tbsp butter
- salt and pepper,to taste.
Preparation
Step 1
Combine the water or stock and orange juice in a saucepan that has a tight-fitting lid.Bring to a boil,then add the couscous.Stir briefly,replace the lid,and turn the heat off.Steam the couscous 10 min.After 10 min.remove the cover and fluff the couscous with a fork.Add the dates,parsley,butter,salt,and pepper,and replace the lid.Allow to steam an additional 5 min.
