Sweet Potato Casserole

Ingredients

  • Topping:
  • 8 sweet potatoes
  • 4 lg. eggs, lightly beaten
  • 1 \2 c milk
  • 1 \4 c packed brown sugar
  • 4 tbsp. (1\2 stick) unsalted butter, melted
  • 1 \2 tsp. vanilla
  • 1 \2 c pecans
  • 1 \4 c packed dark brown sugar
  • 1 \4 c flour
  • 3 tbsp. unsalted buffer, softened

Preparation

Step 1

Preheat oven to350 degrees
Place potatoes on a rimmed baking sheet and bake until tender, about 1 hr.
Cool the potatoes slightly, peel potatoes, discard skin
Mash potatoes until smooth, add eggs milk, brown sugar, melted butter and vanilla until combined
Topping:
Combine pecans, brown sugar,flour and butter in a food processor until combined
Place the sweet potatoes in a casserole dish and sprinkle with the topping
Bake until bubbly and browned in top, about 30 minutes
